As a vegetarian for over 15 years, Moku Roots owner/operator, Alexa Caskey used to struggle to find interesting vegetarian options on Maui. Both an artist and entreprenuer, she began honing her talents in the kitchen as she started a gourmet popsicle company, Maui Tropsicles, in 2015. Alexa then quickly felt the urge to create an entire restaurant AND farm that offers a creative, seasonal, plant based menu to keep things exciting for locals and visitors.
